Salal is a versatile, underutilized native berry from the Pacific Northwest with a unique, earthy flavor profile that thrives in both sweet and savory applications. Ripe berries are deep blue-black, often with a slightly hairy texture, and are best harvested between July and August.

Salal grows best in partial shade, but is perfectly adaptable to a more open, south-facing sunny location as long as it has good drainage and a dampish root run.

They possess a "deep forest" savory, tannic character that makes them excellent for creating sophisticated preserves and liqueurs. Salal berries pair well with tart fruits like Oregon grape, currants, and lemon, or in savory applications with game meat, fish, rosemary, thyme, and mint.
